Quick vinegar hot sauce

This is your basic “Louisiana style” pourable sauce that works on everything and comes together in about 15 minutes.

Ingredients (baseline)

  • 20 fresh hot peppers (cayenne, Fresno, jalapeño, or mix)

  • 1.5 cups white or apple cider vinegar

  • ½ teaspoon salt (start low, adjust)

  • 3 teaspoons minced garlic (or a few cloves)

Method

  1. Stem peppers, optionally remove some seeds if you want it milder.

  2. Add peppers, vinegar, salt, and garlic to a small pot; bring to a boil then simmer until peppers are soft, about 10 minutes.

  3. Blend everything until completely smooth; adjust salt and thin with a bit more vinegar or water if needed.

  4. Cool, bottle, and keep in the fridge for up to a few months.

To riff: add a little sugar or honey, cooked onion, or roasted red pepper for body.
